Easy, find someone already dead(kill a hobo?) and burn them to a crisp. They believe it is the victim because they were seen entering the building before it blew up or something but instead escaped unseen out the back. He has no teeth left to do dental tests with or a fake pair were jammed into the corpse.
Though I am somewhat reminded of Fullmetal Alchemist when Mustang guy faked that hot woman's death.

Wouldn't work, if the body was burned beyond identification and the teeth were removed it could be anyone in said exploding building at a time, they'd put it down to freak accident rather than murder right?

The victim has apparently died due to blood loss after being shot in the chest, because it grazed a vital artery near the heart, whatever. However, the victim was actually killed in [insert some sort of accident/murder involving being stabbed from the front and out the back, creating an exit wound.) To cover it up, he transported the body into town (after removing the arrow), and shot him in the chest. The cause of death was ultimately blood loss, however due to the lack of a significant amount of blood found at the "false" crime scene (it's behind a movie theatre near the edge of town), and the fact that the witness saw someone shooting someone that was lying on their back instead of standing up, and that the wound doesn't match up with the angle of the bullet entering the body... and also the fact that the bullet was recovered from the body, after hitting the concrete below the body... :P
I'm still working out the details, yeah. And yeah, it's not really that original, I'm sure.
Oh, and Roy Mustang is the awesome. Dun forget it.

Eh, poker's already been used. But the idea of contact poison is cool though.

Nah, I think they'd be able to get away with it. Just mentioning cannibalism can't be too bad, and its not like they have to visually show it or anything.
I was thinking of maybe someone being smothered to death by a pillow while he was sleeping? It's a pretty classic murder method, and not very gaudy or complex, in contrast to most killings in the AA universe.
Another way could be a person manipulating someone with a mental disability. Like hiding some maniac's medical records so that the world thinks there sane. And then the mentally unstable person would end up murdering multiple people, but technically it would not be his fault, it would be the person that hid his records.
Another indirect murder could be a CEO allowing his products to be sold even though there was proof that they had some sort of deadly side effect.
