It would be if you didn´t end up leaving blood spilled all over the place.
Plus you have to assume the first stab kills. If you hit him in like the arm even he'll realise pedalling = pain and just get off.
In fact.....how would you convince a blind man to ride a bicycle anyway? Maybe in a gym but then you'd have to make the fatal customisations without the staff or other patrons noticing.
Plus you'd need to transport the body somewhere else and lord knows that would be a challenge.

Maybe being accidentally killed by a bullet that was soaring in the air, and falling, which was intended to kill someone else, but the man aiming the gun was thwarted, and the bullet was shot into the air.

But court would SUCK if they had a SIMPLE death! You need craziness, like, bridge-flying and crazy-ass killers kidnapping your assistant/best friend, then blame said best friend for the murder, all while YOU have ingested a slow-acting toxin and have to get a not guilty verdict for the kidnapping killer in order to get the antidote. WAIT THAT HASN'T HAPPENED YET.

Another more passive way of killing someone, is simply sleep deprivation. This could be taking even longer than poisoning your victim with water though. But maybe the murderer just doesn't try that but additionally, locks up his victim in a darkened room with no light sources. He/She could also torture the victim by playing the same song over and over again. Not to mention, if said victim falls asleep somehow, he/she could be kept awake through pain. Not really horrible pain, rather "normal" pain which is durable but still kind of bothers you a lot. Everything else, like shooting someone in the leg or similar, would eventually cause death and that's not the kind of death the murderer intended for said victim.
Trying to kill the victim in different ways all at once, might work out as well. For example: the police finds a left arm which seems to belong to a victim who possibly drowned. In another city, the police officers there find an unattached right leg which seems heavily burned and so on.
Now the questions are: was it one or more murderers? Is it one or more victims? and many more bizarre questions. I guess, that kind of killer would have more fun playing with the police than killing the victim.
Can you see that I watched and read too much stuff like that?
