Being pressed on something contradictory: I start scratching the back of my neck, sans Gumshoe
Dammit, they've got evidence!: I start tapping my fingers on the stand and grinding my teeth.
Epic Breakdown: Okay, here it goes... let's say we're using the most ninja DS ever, and it has infinite framerate.
15 FPS: I scratch my head, and make a deep, dull moaning sound...
20 FPS: Crap! (I hit the witness stand)
25 FPS: Crap! (I extend my arms and hit both sides of the witness stand)
30 FPS: Crap! (Without turning around, I pound the wall behind me)
(Note: With each further "crap", a different image of my crime flashes behind me)
40 FPS: Crap! (Hit both sides of my head)
60 FPS: Cra-a-a-a-a-a-a-a-a-a-a-a-a-a-a-a-ap! (I begin drumming on the witness stand with each "a")
90 FPS: CRAP! CRAP! CRAP! CRAP! CRAP! CRAP! CRAP! CRAP!

2) I continue with the shifty eyes act while twiddling my thumbs, which I do more quickly as I become increasingly nervous. I also begin to sweat.
3) I begin to twiddle my thumbs at an impossibly fast rate, and then I pound the witness stand with all my strength. I then proceed to hurt my hand, look around anxiously once again, and attempt to escape the courtroom.

Normal: Jack constantly shines the camera around the courtroom. When something particularly interesting or dramatic is said by the defense or prosecution, he will jump and point the camera directly at the speaker, while hitting the zoom button.
Cornered (1): Jack begins texting, slowly and deliberately pressing the buttons. A small bead of sweat slides down his face while he talks.
Cornered (2): Jack texts faster, his fingers hurrying around the keyboard. He perspires slightly more.
Cornered (3): Jack begins pounding on the buttons rapidly, using one hand to hold the cell phone and the other to hit the buttons.
Breakdown: Jack, muttering under his breath, slowly and deliberately raises his index finger. After a few seconds, he slices the finger through the cell phone keyboard, while simultaneously tossing his iPod and camera into the air. A few jolts of electricity pass through his body, and he passes out yelling loudly. Two seconds later, the iPod and the camera come down. A soft moaning is heard.

My turn!
1. I'd probably start with a nervous smile once a few lies are discovered.
2. Then there would be some silly, creepily innocent-sounding giggles.
3. The giggles become uncontrollable and (if there were a sprite) I'd have shadows over my eyes, and a creepy grin.
4. By this point it's essentially maniacal laughter. Holding onto the stand, wide eyes, huge grin, etc.
5. Right before the breaking point I'd stop laughing and stare at the attorneys with a huge grin and wide eyes. Just. Freakin. Stare. Then I'd completely collapse and probably have to be hauled out by the bailiff.

4. 'Oh crap! where the heck did he get THAT evidence?!' Biting my lip and looking a bit worried. Now watching the opposition closely as if I'm trying to figure out if they're bluffing or not.

Then I will point out a weak spot in the defense's case. (You say I'd be suspicious to everyone? Hello. Whenever anyone begins to break down, nobody notices. Nicky needs to quote himself with "Look at the witness's face! ...The defense demands an answer." more. >_<

2. I start to get annoyed, my tone of voice drops to very, very serious, basically saying "You have no idea what you're doing, turn back before it's too late". At some point I'd probably burst a blood vessel in my eye from scowling.
3. Face is twisted into a scowl, fists clenched, start thumping the stand. Everything I say sounds like I'm growling, more than anything.
FINAL BREAKDOWN:
I give the most hellish cry of rage, half a scream, half animalistic snarl. I'd throw things around, break things, try to tear the witness' stand apart, and basically terrify half the courtroom. I wouldn't go down easy, and would be constantly trying to break free of the bailiff/other guards trying to take me away.

Breakdown: Having been betrayed by my mentor/best friend of a defense attorney, I screech, and shatter my glasses in my hand. I start crying and blabbering about having been betrayed, going into general loopiness, and then, I start laughing madly while still crying.
...and honestly, if I were found guilty of a crime I was innocent of, I probably would do just that. Except for shattering my glasses. I need those. But I have done the laughing insanely while crying thing before after a particularly bad day at school. It was... cathartic...

When accused- lean over table gritting teeth while violently grabbing desk (arms shake with tension)
Breakdown-Stand up straight with a small smile on face, look at the judge and bow to him, whilst still inclined quickly arc my body looking to the ceiling and scream and laugh before slamming my hands onto the witness bench and pound it with one of my fists multiple times,before looking up to the judge and smiling.

This doesn't answer the original question, but I thought of a good hypothetical breakdown for an Ace Attorney game.
The murder was a fatal stabbing with a dagger. The killer wears white clothes and drinks a red Slushie during their cross-examination. Every time they slip up, the Slushie spills and they get red splatters on their clothing that look like blood. Toward the end, they brandish the straw menacingly. During their breakdown, they hold the straw like a dagger and furiously stab the witness stand with it.
