This would make for one extremely good plot :P.
Defendant receives a note that their sibling was buried underground in _____ one week after the crime actually happened. When the defendant arrives, they start digging into the spot where they were told their sibling was buried, and as he/she's half-way done, a witness spots them.
Of course, like any other Phoenix Wright/Apollo Justice case, there would be another two witnesses (one who spots the defendant walking to the scene of the crime - the first witness, and another who has a solid reason as to motive for why the defendant would have buried their own brother/sister alive - the last witness).

The victim eats/consumes something that is poisoned with something completely harmful on its own, and then they consume something else later on (like regular medication) that reacts with harmful poison, causing fatality?

Jack The Ripper style killings (less brutal maybe just stabbing) where an unknown killer is leaving people dead in back alleys.
Mail bombs like the Unabomber.
An unsanctioned boxing match (so no one would bother checking the gloves) the victim is killed because the other boxer has something hard (or has most of the padding removed) in his gloves. I guess a twist could be that the boxer had no idea and someone else messed with his gloves.
I thought of this after thinking up the boxing match: A group that has fights like Fight Club. One guy knocks out his opponent and the match ends. Later the opponent dies and the guy is accused (Would that be manslaughter instead of murder?). Instead of him dying from his injuries from the fight, he dies because someone else beat him to death after the fight when he was too weak to defend himself.
I hope I didn't repeat any previous posts but I couldn't remember them all.

2-3 especially is a good example of shaping the crime and character to fit the cause of death.

This is more of an MO than a murder method, really, but I was thinking...
What if a killer pleaded guilty to manslaughter or self-defense, when in fact it was a premeditated murder?
It would work best in a prosecutor's game.

I don't know how I'll manage to serve all that community service with a broken heart. *fake tears* Oh, but don't trouble yourself feeling badly for me, Mr. Edgeworth! Ah! Come to think of it, I guess it's soooort of like 3-2 -- the whole pleading-guilty-to-a-lesser-sentence thing. Oh well... Also, in a game in which you play as a defense lawyer... a case where the death truly was a complete natural accident, and your client was simply in the wrong place at the wrong time. Sure, PW tradition usually calls for the eventual exposure of the true murderer -- but, really, all a defense attorney should have to do is prove his client's innocence.
