Still, I do believe Ergheiz has the right idea- it would give the character an unclear silouhette if Phoenix or Mia did the finger point with the right hand. Edgey gets away with a left-hand point even though that arm is nearer to the "camera" only because he doesn't really have a high point like the others.
As for all those other characters..... who knows?

If they point with their RIGHT hands, they could thwap their partners over the head in the follow-through.

Ow!Miles and Franziska don't have anyone in the way of their arms when they point with the camera-facing hand, so they are free to gesture with it. (Not that anyone WOULD WANT to stand in the same room as a whip-happy Franziska...)
The lefty-to-righty ratio is unusually high compared to real life in these games though, even if you consider all the defense attorneys to be potentially right-handed.
Adrian favors her left, Moe favors his left, Makoto draws with her left, Larry uses his left, Takita's YOU WANT KARATE? stance places the right in the blocking (Non-dominant) position, Jake holds things with his left, Angel presents lunches with her left... yeeeah.
By the way, Morgan, Lana, Kirihito, Redd White, Hotti, Gant, and Frank Sahwit appear to favor their right hands. Quite a few sinister people in the right-handed list.
But a giant mallet will break them faster.

I don't know if you can go by this, but there's a couple of quotes in Vampirates by Justin Somper that might be of interest. They're from book 2:
"Look at the way you offered your sword for inspection. The way you did that also dates back to the classical Japanese warriors."
When Phoenix points with his right, it could be that he was mad at Kirihito, and didn't bother with the matter.
Again, this isn't much to go by, but if Somper did some research and found this to b the case, who can say?

One's hand should not touch the page at all when writing formal column-based brush-calligraphy in Japanese or Chinese. Also, Japan has adopted western left-to-right-rows as an acceptable writing format; this favors right-handed writers even if one does rest the hand on the page, as one might when writing with a pencil or pen rather than a brush. Plus the genetic drift from right-handed America after World War II...
If the lefty/righty ratio really is higher in Japan, I doubt there's any "reason" for it beyond random chance.
